Ingredients

For the Scones:

  • All Purpose Flour 360 grams

  • Granulated Sugar 45 grams

  • Baking Powder 15 grams

  • Salt 5 grams

  • Dried Basil 2 grams

  • Unsalted butter, cubed (cold) 110 grams

  • Egg (cold) 50 grams

  • Cultured Buttermilk (cold) 115 grams

  • Heavy Cream (cold) 5 grams

  • Extra buttermilk to brush on top of scones

  • Sprinkle of sugar for each scone

The Recipe!

Step 1

Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Line a 9 inch round cake pan with cling wrap.


Step 2

Sift together in a bowl the flour sugar, baking powder, salt. Add in dried basil. Mix well.


Step 3

Mix cold butter into the dry ingredients until it is course and butter is pea-sized.


Step 4

Mix the cold egg and cold buttermilk in a separate bowl. Pour into the flour and butter mix.


Sep 5

Mix the cold heavy cream and strawberries into the dough. Do not overmix or the scones will be tough.


Step 6

Making sure the dough is well floured, place into the 9 inch cake pan lined with cling wrap. Press the dough into the pan until it is the shape of the pan. Flip it out onto a floured surface. Cut into 8-12 equal sized pieces.


Step 7

Place the scones 2 inches apart on the baking sheet lined with parchment paper. Brush with buttermilk then top with a sprinkle of sugar.


Step 8

Place the baking sheet with scones into the 400 degree oven. Bake for 30 minutes or until golden. Checking occasionally to be sure it is not over baked or baked unevenly.
