About the Recipe

There’s something about blackberry crumble bars that feels like a slow summer afternoon—blackberries still warm from the sun, their juices turning jammy as they nestle into a buttery, golden crust. The toasted walnuts bring that cozy, earthy crunch The Garden Loaf is known for, making each bar taste like a walk through the garden followed by a quiet moment in the kitchen. Simple, rustic, and irresistibly homey—these bars are everything I love about baking with what the season gives.

Ingredients

For the Walnut Oat Streusel

  • 3/4 cup (70g) rolled oats

  • 7 tbsp (100g) unsalted butter

  • 1/2 cup (70g) chopped walnuts

  • 1 cup (150g) all-purpose flour

  • 1/2 cup (100g) turbinado sugar

  • 2 tbsp (30g) water


For the Blackberry Filling

  • 2 cups blackberries: fresh or frozen

  • 1/2 tbsp lemon juice or white vinegar

  • 1/2 tbsp all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tsp vanilla paste


For the Bottom Crust

  • 1/2 cup (1 stick) butter-melted

  • 1/2 cup brown sugar

  • 1 egg

  • 1 1/2 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp cinnamon powder

The Recipe!

Step 1: Making the Walnut Oat Strusel


Measure out all o the ingredients.


Place the rolled oats butter, walnuts, flour, and sugar into a stand mixer bowl fitted with the paddle attachment.


Mix at low speed for 1 minute.


Pour in water and mix at low speed until a crumble forms.


Spread crumble out onto a baking sheet lined with parchment paper.


Place in the refridgerator for 30 minutes.


Preheat oven to 320 degrees Farenheit.


Bake for 20 minutes or until golden.


Step 2: Making the Blackberry Filling


Measure out all of the ingredients and place them into a skillet on medium-low heat.


Simmer and stir occasionally so the blackberries start to release their juice.


Take a fork or a potato masher and mash up the blackberries so there are small pieces left.


Simmer for 10 minutes, stirring occasionally.


Turn off the heat soure and take the skillet off of the heat.


Let the filling cool.


Step 3: Making the Bottom Crust.


Measure out all of the ingredients.


Preheat the oven to 375 degrees Fahrenheit.


Grease and line an 8x8 baking pan


Melt the butter and stir in the brown sugar and egg.


Sift the flour, baking powder, and cinnamon powder into the wet ingredients. The dough will be thick.


Place the bottom crust in the 8x8 pan. Press the dough so it fully covers the bottom in an even layer.


Spread the blackberry filling on top of the bottom crust.


Sprinkle the walnut oat streusel on top of the blackberry filling.


Bake at 375 degrees Fahrenheit for 30 minutes.


Let cool and enjoy!
